Maturation: In stainless steel on lees for 4 months. Alcohol: 12.8% Alc/Vol
Cellaring Potential: Up to 3 years. Growing Season: A testing year. Despite drought and hailstorms near harvest, near perfect, sound fruit with good flavour was picked. The vine canopy was managed so as to ensure shading of the fruit preventing sunburn and preserving the delicate varietal characters.
Winemaking: The crushed grapes were drained and pressed without SO2 to stainless tanks and the juice was cold settled. The clarified juice was then cold fermented using selected pure yeast strain. The wine was matured on lees for 4 months prior to bottling.
Colour: Pale straw
Nose: Aromas reminiscent of riper pear and stone fruit.
Palate: The palate is rich and textural with flavours of pear juice and apricots and is balanced by fresh acidity.
