Regional Appellation: Plumpton, Vic. Australia (Sunbury G.I.)

Grape Varieties: 100% Cabernet Sauvignon

Maturation: Matured in new and one year old French oak barrels

Alcohol:
14% Alc/Vol

Cellaring Potential:
Up to 10 years.

Growing Season: Continuing droought. A warm, dry year, producing fully ripe and sound grapes. Extensive canopy management was used to provide optimum exposure of the grapes and developing intense ripe fruit characters.

Winemaking: The grapes were crushed and destemmed into open fermenter. The desired level of colour and tannin extraction was achieved by a combination of plunging and pumping over. At the completion of the primary fermentation the skins were gently tank pressed and the juice was inoculated for malolactic fermentation. The new wine was matured for 12 months in new and one year old French oak barrels prior to bottling.

Colour:
Deep, dense garnet red.

Nose: Ripe berry fruit, intergrated oak with tabacco leaf and violet overtones.

Palate: A full rich palate packed with flavour. Although full bodied, the ripe grape tannins are soft and give a long chewy finish. Bottle age over the next five years will develop added complexity and result in a complete and satisfying cabernet.
